- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
- Transfer the beef mixture to the slow cooker. Add the beef broth, diced tomatoes, and frozen mixed vegetables. Stir to combine.
- Cover and cook on low for 4-6 hours, or until the vegetables are tender.
- Stir in the shredded cheddar cheese and milk. Cook for an additional 10-15 minutes, until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
