Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
  • Transfer the beef mixture to the slow cooker. Add the beef broth, diced tomatoes, and frozen mixed vegetables. Stir to combine.
  • Cover and cook on low for 4-6 hours, or until the vegetables are tender.
  • Stir in the shredded cheddar cheese and milk. Cook for an additional 10-15 minutes, until the cheese is melted and the soup is creamy.
