  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper (to taste)
  • Optional: 1 cup spinach or kale, chopped
  • Optional: Grated Parmesan (for topping)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground chicken, breaking it apart with a spoon. Cook until browned.
  2. Add the diced onion, garlic, carrots, and celery. Cook for 5-7 minutes, or until the vegetables soften and the onion turns translucent.
  3. Stir in the diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring to a simmer.
  4. Add the heavy cream and cook for another 5 minutes, stirring occasionally.
  5. (Optional) Stir in spinach or kale for added nutrients and cook until wilted.
  6. Taste and adjust seasonings if needed.
  7. Serve hot, topped with grated Parmesan, if desired.
