- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper (to taste)
- Optional: 1 cup spinach or kale, chopped
- Optional: Grated Parmesan (for topping)
Instructions
- In a large pot, heat olive oil over medium heat. Add the ground chicken, breaking it apart with a spoon. Cook until browned.
- Add the diced onion, garlic, carrots, and celery. Cook for 5-7 minutes, or until the vegetables soften and the onion turns translucent.
- Stir in the diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring to a simmer.
- Add the heavy cream and cook for another 5 minutes, stirring occasionally.
- (Optional) Stir in spinach or kale for added nutrients and cook until wilted.
- Taste and adjust seasonings if needed.
- Serve hot, topped with grated Parmesan, if desired.
