Ingredients
Scale
- Ground beef (1 lb, or adjust based on preference)
- Potatoes, peeled and diced (4 medium potatoes or about 4 cups)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups chicken or beef broth
- 1 cup heavy cream
- 1 1/2 cups cheddar cheese, shredded (for topping)
Instructions
- Brown the Ground Beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat and set the beef aside. - Cook the Vegetables:
In the same pot, add a bit of olive oil or butter if needed, and sauté the chopped onion, minced garlic, diced carrots, and chopped celery for 5-7 minutes, or until softened. - Add the Potatoes and Broth:
Add the diced potatoes to the pot, then pour in the chicken or beef broth. Stir to combine and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender. - Combine the Ingredients:
Once the potatoes are tender, return the browned ground beef to the pot. Stir in the heavy cream and let the soup simmer for another 5 minutes to combine the flavors. - Add Cheese and Serve:
Stir in the shredded cheddar cheese, allowing it to melt into the soup, creating a creamy and cheesy texture. Season the soup with salt and pepper to taste. - Serve:
Ladle the soup into bowls and serve hot, topped with additional cheddar cheese if desired. You can also garnish with fresh herbs or a dollop of sour cream if you prefer.
Notes
- If you want a thicker soup, you can mash some of the potatoes directly in the pot to create a creamier texture.
- For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce.
- This soup can be made ahead and stored in the refrigerator for up to 3 days or frozen for longer storage.
