Instructions

  • Brown the Ground Beef:
    In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat and set the beef aside.
  • Cook the Vegetables:
    In the same pot, add a bit of olive oil or butter if needed, and sauté the chopped onion, minced garlic, diced carrots, and chopped celery for 5-7 minutes, or until softened.
  • Add the Potatoes and Broth:
    Add the diced potatoes to the pot, then pour in the chicken or beef broth. Stir to combine and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender.
  • Combine the Ingredients:
    Once the potatoes are tender, return the browned ground beef to the pot. Stir in the heavy cream and let the soup simmer for another 5 minutes to combine the flavors.
