  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 cup dried lentils
  • 6 cups beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • In a large pot, brown the beef stew meat over medium heat until it’s fully browned.
  • Add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté the vegetables until they begin to soften, about 5 minutes.
  • Stir in the dried lentils, beef broth, dried thyme, and season with salt and pepper.
