- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 cup dried lentils
- 6 cups beef broth
- 1 tsp dried thyme

Instructions
- In a large pot, brown the beef stew meat over medium heat until it’s fully browned.
- Add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté the vegetables until they begin to soften, about 5 minutes.
- Stir in the dried lentils, beef broth, dried thyme, and season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 1-2 hours, or until the beef is tender and the lentils are cooked through.
