Description

  • 2 heads of garlic
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 slices of French baguette
  • 1 cup grated Gruyere cheese
  • Fresh parsley for garnish

Instructions

  • Preheat Oven:
    Preheat the oven to 400°F (200°C).
  • Prepare Garlic:
    Cut off the top of the garlic heads to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap them in aluminum foil, and roast in the oven for 30-40 minutes until the garlic is soft and caramelized.
  • Sauté Onion:
    In a large pot, heat the remaining olive oil over medium heat. Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.
  • Make the Soup Base:
    Once the garlic is roasted, squeeze the garlic cloves out of their skins into the pot with the onions. Add the chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook for 15-20 minutes to allow the flavors to meld.
  • Prepare Baguette:
    While the soup is simmering, toast the slices of French baguette in the oven or on a grill until they are crispy and golden.
  • Assemble Soup:
    Remove the bay leaf from the soup. Ladle the soup into bowls, top each with a slice of toasted baguette, and sprinkle generously with grated Gruyère cheese.
  • Melt the Cheese:
    Place the bowls under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
  • Serve and Garnish:
