These flaky, golden-brown pillows are filled with a rich and creamy pistachio-ricotta mixture, sweetened with honey and spiced with cinnamon. They make a perfect dessert or snack, combining the crunch of pistachios with the smooth texture of ricotta in every bite.

- 1 cup shelled pistachios
- 1 cup ricotta cheese
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 package phyllo dough
- 1/2 cup melted butter
Instructions
- Preheat oven to 350°F (175°C).
- In a food processor, pulse pistachios until finely ground.
- In a bowl, mix together ground pistachios, ricotta cheese, honey, vanilla extract, and cinnamon until well combined.
- Lay out a sheet of phyllo dough and brush with melted butter.
- Place a spoonful of the pistachio ricotta mixture at one end of the phyllo dough.
- Roll the phyllo dough over the mixture to create a pillow shape, folding in the sides as you roll.
- Repeat with remaining phyllo dough and mixture.
- Place pillows on a baking sheet and bake for 15-20 minutes, or until golden brown.
- Serve warm and enjoy!
Notes
- For an extra crunch, you can sprinkle some chopped pistachios on top of the pillows before baking.
- These can also be dusted with powdered sugar after baking for a sweet touch.
- You can store leftovers in an airtight container for a few days, but they’re best enjoyed fresh.
