Description

These flaky, golden-brown pillows are filled with a rich and creamy pistachio-ricotta mixture, sweetened with honey and spiced with cinnamon. They make a perfect dessert or snack, combining the crunch of pistachios with the smooth texture of ricotta in every bite.


Ingredients

  • 1 cup shelled pistachios
  • 1 cup ricotta cheese
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 package phyllo dough
  • 1/2 cup melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, pulse pistachios until finely ground.
  3. In a bowl, mix together ground pistachios, ricotta cheese, honey, vanilla extract, and cinnamon until well combined.
  4. Lay out a sheet of phyllo dough and brush with melted butter.
  5. Place a spoonful of the pistachio ricotta mixture at one end of the phyllo dough.
  6. Roll the phyllo dough over the mixture to create a pillow shape, folding in the sides as you roll.
  7. Repeat with remaining phyllo dough and mixture.
  8. Place pillows on a baking sheet and bake for 15-20 minutes, or until golden brown.
  9. Serve warm and enjoy!

Notes

  • For an extra crunch, you can sprinkle some chopped pistachios on top of the pillows before baking.
  • These can also be dusted with powdered sugar after baking for a sweet touch.
  • You can store leftovers in an airtight container for a few days, but they’re best enjoyed fresh.
