- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground ginger
- 1 3/4 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 6 tablespoons unsalted butter, room temperature
- 1/2 cup dark brown sugar
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
Instructions
- n a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
- In a large bowl, using an electric mixer, beat the butter and brown sugar until fluffy.
- Beat in the egg, molasses, and vanilla until well combined.
- Gradually stir in the dry ingredients until a dough forms.
- Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a floured surface, roll out the dough and cut out gingerbread men shapes.
- Place the cookies on the baking sheets and bake for 8-10 minutes, or until the edges are firm.
- Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

- The dough can be made ahead of time and stored in the refrigerator for up to 3 days.
