Ingredients
Scale
- 1 cup unsalted butter
- 1 cup brown sugar (packed)
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 cups quick oats
- 1 cup shredded coconut
- 1/2 cup chopped pecans
- 1/2 teaspoon salt
Instructions
- Prepare a baking sheet: Line a baking sheet with parchment paper or wax paper for easy cleanup.
- Cook the syrup mixture: In a medium saucepan, combine the butter, brown sugar, and milk. Stir the mixture over medium heat until the butter has melted and the sugar is dissolved. Bring it to a boil, stirring frequently. Once it starts to boil, let it cook for about 1-2 minutes, then remove it from the heat.
- Add flavoring: Stir in the vanilla extract and salt into the syrup mixture.
- Combine with dry ingredients: Stir in the oats, shredded coconut, and chopped pecans until everything is well combined.
- Shape the cookies: Using a spoon or a cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Gently press each mound to form a cookie shape.
- Let the cookies set: Allow the cookies to cool and harden at room temperature for about 30-60 minutes, or until they have set completely.
Notes
- Storage: These cookies can be stored in an airtight container at room temperature for up to 5 days. You can also refrigerate them for a firmer texture.
