Description

These No Bake Pecan Coconut Praline Cookies are the perfect combination of crunchy pecans, sweet coconut, and caramel-like praline flavor—all without turning on the oven! Quick and easy to make, they are a sweet, nutty, and chewy treat everyone will love.

Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup brown sugar (packed)
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups quick oats
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 teaspoon salt

Instructions

  • Prepare a baking sheet: Line a baking sheet with parchment paper or wax paper for easy cleanup.
  • Cook the syrup mixture: In a medium saucepan, combine the butter, brown sugar, and milk. Stir the mixture over medium heat until the butter has melted and the sugar is dissolved. Bring it to a boil, stirring frequently. Once it starts to boil, let it cook for about 1-2 minutes, then remove it from the heat.
  • Add flavoring: Stir in the vanilla extract and salt into the syrup mixture.
  • Combine with dry ingredients: Stir in the oats, shredded coconut, and chopped pecans until everything is well combined.
  • Shape the cookies: Using a spoon or a cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Gently press each mound to form a cookie shape.
  • Let the cookies set: Allow the cookies to cool and harden at room temperature for about 30-60 minutes, or until they have set completely.

Notes

  • Storage: These cookies can be stored in an airtight container at room temperature for up to 5 days. You can also refrigerate them for a firmer texture.
  • Add-ins: Feel free to add other mix-ins such as chocolate chips, raisins, or other nuts for variety.
