- Mini Dark Chocolate Chips (optional)
Instructions
- In a large mixing bowl, combine the oats, peanut butter, honey, ground flaxseed, chia seeds (if using), and vanilla extract.
- Stir in chocolate chips or mini dark chocolate chips if desired.
- Mix everything together until well combined and sticky enough to form into balls.
- Using your hands, roll the mixture into bite-sized balls (about 1 inch in diameter).
- Place the energy bites on a baking sheet lined with parchment paper or a plate.
- Refrigerate for at least 30 minutes to firm up before enjoying.
- Store in an airtight container in the fridge for up to a week.
