- 1/4 cup instant coffee granules
- 1 cup chocolate chips
- 1 cup chopped peppermint candies
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, cream together butter, sugar, and brown sugar.
- Beat in eggs and vanilla extract until well combined.
- In a separate bowl, combine flour, cocoa powder, baking soda, salt, and instant coffee granules.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Stir in the chocolate chips and chopped peppermint candies.
- Drop dough by rounded tablespoons onto ungreased baking sheets.
- Bake for 8-10 minutes, or until set.
- Allow to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
- For a more intense coffee flavor, you can increase the amount of instant coffee granules.
- Make sure to chop the peppermint candies finely to ensure even distribution in the cookie dough.
- If you prefer, you can also drizzle melted chocolate on top of the cookies for an extra touch of chocolate.
