  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup instant coffee granules
  • 1 cup chocolate chips
  • 1 cup chopped peppermint candies

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, cream together butter, sugar, and brown sugar.
  • Beat in eggs and vanilla extract until well combined.
  • In a separate bowl, combine flour, cocoa powder, baking soda, salt, and instant coffee granules.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Stir in the chocolate chips and chopped peppermint candies.
  • Drop dough by rounded tablespoons onto ungreased baking sheets.
  • Bake for 8-10 minutes, or until set.
  • Allow to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

  • For a more intense coffee flavor, you can increase the amount of instant coffee granules.
  • Make sure to chop the peppermint candies finely to ensure even distribution in the cookie dough.
  • If you prefer, you can also drizzle melted chocolate on top of the cookies for an extra touch of chocolate.
