Instructions
- Preheat the Oven:
- Preheat your oven to 325°F (163°C). Grease or line an 8×8-inch baking pan with parchment paper.
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is evenly combined.
- Press the crust mixture into the bottom of the prepared baking pan, pressing it down firmly to create an even layer.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the sour cream, granulated sugar, eggs, and vanilla extract. Mix until well combined.
- Gently fold in the mini chocolate chips, saving a handful to sprinkle on top.
- Assemble the Bars:
- Pour the cheesecake filling over the prepared crust, spreading it evenly.
- Sprinkle the remaining mini chocolate chips on top.
- Bake:
- Bake for 30-35 minutes, or until the edges are set, and the center has a slight jiggle.
- Turn off the oven and let the cheesecake bars cool in the oven for 10 minutes before removing them.
- Chill:
- Allow the cheesecake bars to cool completely at room temperature, then refrigerate for at least 2 hours (or overnight) to fully set.
- Serve:
