Instructions

  • Preheat the Oven:

  • Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is evenly combined.
    • Press the crust mixture into the bottom of the prepared baking pan, pressing it down firmly to create an even layer.
  • Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Add the sour cream, granulated sugar, eggs, and vanilla extract. Mix until well combined.
    • Gently fold in the mini chocolate chips, saving a handful to sprinkle on top.
  • Assemble the Bars:
    • Pour the cheesecake filling over the prepared crust, spreading it evenly.
    • Sprinkle the remaining mini chocolate chips on top.
  • Bake:
    • Bake for 30-35 minutes, or until the edges are set, and the center has a slight jiggle.
    • Turn off the oven and let the cheesecake bars cool in the oven for 10 minutes before removing them.
  • Chill:
    • Allow the cheesecake bars to cool completely at room temperature, then refrigerate for at least 2 hours (or overnight) to fully set.
