Cupid’s Love Pies are mini hand pies with a sweet, fruity filling wrapped in a golden, flaky crust. For the Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp salt
- 1 cup unsalted butter, cold and cut into cubes
- 1/4 cup cold water (more if needed)
- 1 tbsp heavy cream (for brushing)
For the Filling:
- 1 cup fresh strawberries, chopped (or any berry of choice)
- 1/2 cup raspberry jam (or strawberry jam)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp granulated sugar
- 1/4 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
Instructions
- Make the Pie Crust:
- In a large bowl, combine flour, sugar, and salt. Add the cold butter cubes and use a pastry cutter or your hands to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add cold water, one tablespoon at a time, until the dough begins to come together. Be careful not to overwork the dough. If it feels too dry, add a bit more water, but keep the dough chilled.
- Divide the dough into two portions, shape them into discs, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Prepare the Filling:
- In a small saucepan, combine the chopped strawberries, raspberry jam, lemon juice, cornstarch, sugar, vanilla extract, and cinnamon (if using). Cook over medium heat, stirring frequently, until the mixture thickens and the berries release their juices, about 5-7 minutes.
- Remove the saucepan from the heat and let the filling cool to room temperature.
- Assemble the Love Pies:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out one portion of the chilled dough on a lightly floured surface to about 1/8 inch thickness. Using a heart-shaped cookie cutter, cut out heart-shaped pieces of dough. You’ll need two hearts per pie.
- Place one heart-shaped dough cutout on the prepared baking sheet. Spoon about 1-2 tablespoons of the strawberry filling into the center of the dough.
- Place another heart-shaped dough cutout over the filling and press the edges together to seal. You can crimp the edges with a fork for a decorative touch.
- Brush the tops of the pies with heavy cream to give them a golden finish while baking.
- Bake:
- Bake the pies in the preheated oven for 20-25 minutes, or until the crust is golden and the filling is bubbly.
- Remove the pies from the oven and let them cool on a wire rack.
- Serve:
- Once cooled, dust the pies with a little powdered sugar for a sweet finishing touch. Serve with a side of whipped cream or vanilla ice cream for an extra indulgence!
Notes
- You can substitute the strawberries with other berries like raspberries, blueberries, or blackberries, depending on your preference.
- If you don’t have a heart-shaped cutter, you can use a round cutter or any shape you like.
- These pies are great for making ahead. Just store them in an airtight container for up to 3 days.
