These Cherry Mash Truffles are the perfect blend of rich chocolate, creamy peanut butter, and sweet cherries. Coated in smooth chocolate and sprinkled with chopped peanuts, these truffles are a decadent treat for holidays, parties, or just when you need a sweet indulgence!

- 1 cup maraschino cherries, drained and chopped (reserve juice for later)
- 1/2 cup creamy peanut butter
- 1 1/2 cups powdered sugar
- 1 cup milk chocolate chips
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup chopped peanuts (for coating)
- 2 tablespoons reserved cherry juice
Instructions
- Prepare the truffle filling: In a medium-sized mixing bowl, combine the chopped cherries, peanut butter, powdered sugar, and 2 tablespoons of cherry juice. Mix until smooth and creamy. You may need to add a little extra cherry juice if the mixture feels too thick.
- Chill the mixture: Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper. Chill the truffle balls in the freezer for at least 30 minutes to firm up.
- Melt the chocolate: In a microwave-safe bowl, combine the milk chocolate chips and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Coat the truffles: Using a fork or skewer, dip each chilled truffle ball into the melted chocolate, ensuring it is fully coated. Tap the fork gently on the edge of the bowl to remove any excess chocolate. Place the coated truffle back onto the parchment-lined baking sheet.
- Add the finishing touch: Immediately after coating the truffles in chocolate, roll them in the chopped peanuts to give them a crunchy coating.
- Chill the truffles: Return the truffles to the refrigerator for 20-30 minutes to allow the chocolate coating to set.
- Serve: Once the truffles have set, transfer them to a serving dish and enjoy!
Notes
- If you don’t have maraschino cherries, you can use fresh cherries, but be sure to pit and chop them finely.
- For a smoother truffle center, you can blend the peanut butter and cherry mixture in a food processor.
- Store these truffles in an airtight container in the fridge for up to 1 week.
