Ingredients

  • 1 cup fresh blueberries
  • 1 tablespoon cornstarch
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 package refrigerated pie crusts
  • 1 egg, beaten
  • 1/4 cup coarse sugar

Instructions

  • Preheat oven to 375°F (190°C).
  • In a medium bowl, mix together blueberries, cornstarch, sugar, and lemon juice.
  • Roll out pie crusts and cut into small circles using a cookie cutter.
  • Place a spoonful of blueberry mixture onto half of the circles, then top with remaining circles. Use a fork to seal the edges.
  • Brush the tops of the cookies with beaten egg and sprinkle with coarse sugar.
  • Bake for 15-20 minutes or until golden brown.
  • Allow to cool before serving.

Notes

  • These cookies are best when served fresh but can be stored in an airtight container for a couple of days.
  • You can also use frozen blueberries if fresh ones aren’t available.
