Description

This tangy and refreshing Lemon Vinaigrette Salad Dressing is a simple yet flavorful addition to any salad. With fresh lemon juice, Dijon mustard, and olive oil, this homemade dressing brings out the natural flavors of your greens and vegetables. It’s light, healthy, and easy to make!

Ingredients

Scale
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional for sweetness)
  • 1/2 cup extra virgin olive oil
  • Salt and pepper, to taste
  • 1 small garlic clove, minced (optional)

  • 1 teaspoon dried oregano or fresh chopped herbs (optional)

Instructions

  • Combine the Ingredients: In a small bowl or jar, whisk together the freshly squeezed lemon juice and Dijon mustard until smooth.
  • Add Sweetener: Stir in the honey or maple syrup, if using, to balance the tanginess of the lemon.
  • Slowly Add Olive Oil: Gradually whisk in the olive oil until the dressing emulsifies and becomes smooth.
  • Season: Add salt and pepper to taste. For additional flavor, mix in the minced garlic and herbs like oregano or fresh thyme.

  • Store or Serve: Use immediately over your favorite salad or store in an airtight container in the fridge for up to 1 week. Shake or whisk again before serving.

Notes

  • If you prefer a creamier version, you can add a tablespoon of tahini or Greek yogurt.
  • Customize the sweetness by adjusting the amount of honey or maple syrup.

  • This dressing is versatile, working great for salads, roasted vegetables, or as a marinade for chicken or fish.
