Description

This tangy and refreshing Lemon Vinaigrette Dressing is the perfect addition to any salad or vegetable dish. With fresh lemon juice, zesty mustard, and a touch of honey for sweetness, it’s a simple, healthy, and flavorful dressing that complements any greens or roasted veggies.

Ingredients

Scale
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • 1/2 cup extra virgin olive oil
  • Salt and pepper, to taste
  • 1 small garlic clove, minced (optional)

  • 1 teaspoon dried oregano or fresh chopped herbs (optional)

Instructions

  • Combine the Ingredients: In a small bowl or jar, whisk together the lemon juice, Dijon mustard, and honey (if using).
  • Add Olive Oil: Slowly drizzle in the olive oil while whisking constantly to emulsify the dressing.
  • Season: Add salt and pepper to taste. For extra flavor, you can add minced garlic and herbs like oregano or fresh thyme.

  • Store or Serve: Use immediately or store in an airtight container in the fridge for up to 1 week. Shake or whisk again before serving if the oil separates.

Notes

  • For a vegan version, skip the honey or replace it with maple syrup.

  • You can adjust the amount of mustard and honey based on your preference for tanginess or sweetness.
