- 2 lbs (900g) baby potatoes or regular potatoes (cut into chunks if using larger potatoes)
- 3 tablespoons olive oil
- 6 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or thyme, optional)
- 1 teaspoon paprika (optional)
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Prepare the Potatoes: If using regular potatoes, cut them into 1-inch cubes. If using baby potatoes, simply halve them or leave them whole depending on their size.
- Season the Potatoes: In a large bowl, toss the potatoes with olive oil, minced garlic, chopped rosemary (or thyme), paprika, salt, and pepper until they’re evenly coated.
- Roast the Potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast in the oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through cooking to ensure even roasting.
- Garnish and Serve: Once roasted, remove from the oven and sprinkle with fresh parsley. Serve with lemon wedges for added freshness (optional).
Notes
- For extra crispiness, you can parboil the potatoes in salted water for 5-7 minutes before roasting. Drain them well and then proceed with the seasoning.
- Feel free to adjust the herbs based on your preference. Thyme, oregano, or basil also work great with this recipe.
- If you prefer a more garlicky flavor, you can roast some whole garlic cloves alongside the potatoes.
