Ingredients
For the Burrito Filling:
- 1 lb ground beef (or chicken, or beans for a vegetarian version)
- 1 medium onion, diced
- 1 tablespoon olive oil
- 1 packet taco seasoning (or homemade seasoning)
- 1/2 cup water
- 1 cup cooked rice (optional)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 large flour tortillas
For the Sauce:
- 1 can (10 oz) red enchilada sauce
- 1/2 cup salsa
- 1 tablespoon chili powder (optional for added heat)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
For Topping:
- 1 cup shredded cheese
- 1/4 cup sour cream (optional)
- Fresh cilantro, chopped (optional)
Instructions
- Prepare the filling:
Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 2-3 minutes until softened. Add the ground beef (or chicken) and cook until browned, breaking up the meat as it cooks. Drain any excess fat.Stir in the taco seasoning and water, and cook for another 5 minutes. If you’re using beans instead of meat, simply heat the beans and add the taco seasoning.
- Prepare the sauce:
In a medium saucepan, combine the enchilada sauce, salsa, chili powder, garlic powder, cumin, salt, and pepper. Heat over medium heat, stirring occasionally, until warmed through. - Assemble the burritos:
Preheat your oven to 375°F (190°C). Lay a flour tortilla flat on a plate or clean surface. Spoon a generous amount of the cooked filling (meat, beans, rice, and cheese) into the center of each tortilla. Roll up the tortilla, folding in the sides as you go, to form a burrito. - Bake the burritos:
Spread a small amount of the sauce on the bottom of a baking dish. Place the assembled burritos seam side down into the dish. Pour the remaining sauce over the top of the burritos and sprinkle with the remaining shredded cheese.Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve:
Once out of the oven, top the wet burritos with sour cream and fresh cilantro, if desired. Serve hot and enjoy!
Notes
- You can use ground turkey or even a vegetarian filling like black beans for a healthier alternative.
- For extra flavor, try adding diced jalapeños or green chilies to the filling.
- Make sure the burritos are tightly rolled to keep all the filling inside while baking.
