Description

These Crispy Baked Ground Beef Tacos are a delicious twist on a classic taco recipe, baked to perfection with a cheesy, savory filling. Ground beef seasoned with taco seasoning and red enchilada sauce is stuffed into warm corn tortillas, then baked until crispy. This easy-to-make recipe will satisfy your taco cravings and make for a crowd-pleasing meal.

  • 1 pound lean ground beef (90% lean)

  • 1 packet of taco seasoning

  • 3/4 cup red enchilada sauce

  • 2 1/2 cups Oaxaca cheese, Mexican cheese, or Monterey Jack

  • 10 corn tortillas

  • 1 tablespoon olive oil


Instructions

  • Preheat the Oven:
    Preheat your oven to 450°F (230°C).

  • Cook the Ground Beef:
    Heat a skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks. Once browned, stir in the taco seasoning and red enchilada sauce. Bring the mixture to a simmer, then remove from heat.

  • Prepare the Tortillas:
    Wrap the tortillas in a damp paper towel and microwave for 30-60 seconds, just until they’re pliable.

  • Assemble the Tacos:
    Brush one side of each tortilla with olive oil. Place the tortillas on a baking sheet with the oiled side facing down. Add about 2 tablespoons of cheese to half of each tortilla, followed by 1/4 cup of the beef mixture, and top with 2 more tablespoons of cheese. Fold the tortilla over to create a taco shape. Repeat with the remaining tortillas and arrange the tacos in a single layer on the baking sheet.

  • Bake:
    Bake for 16 minutes, or until the tortillas are crispy and the cheese is melted.

 

  • Cool & Serve:
    Let the tacos cool for about 3 minutes before serving.

Notes

  • Warm Tortillas: Be sure to warm the tortillas before folding them to avoid cracking. If they don’t stay folded, secure them with a toothpick.

 

  • Best Pan Choice: For best results, bake directly on a nonstick or ceramic sheet pan to prevent sticking. Avoid using foil.
