1 pound lean ground beef (90% lean)

1 packet of taco seasoning

3/4 cup red enchilada sauce

2 1/2 cups Oaxaca cheese, Mexican cheese, or Monterey Jack

10 corn tortillas

1 tablespoon olive oil
Instructions

Preheat the Oven:
Preheat your oven to 450°F (230°C). -
Cook the Ground Beef:
Heat a skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks. Once browned, stir in the taco seasoning and red enchilada sauce. Bring the mixture to a simmer, then remove from heat. -
Prepare the Tortillas:
Wrap the tortillas in a damp paper towel and microwave for 30-60 seconds, just until they’re pliable. -
Assemble the Tacos:
Brush one side of each tortilla with olive oil. Place the tortillas on a baking sheet with the oiled side facing down. Add about 2 tablespoons of cheese to half of each tortilla, followed by 1/4 cup of the beef mixture, and top with 2 more tablespoons of cheese. Fold the tortilla over to create a taco shape. Repeat with the remaining tortillas and arrange the tacos in a single layer on the baking sheet. -
Bake:
Bake for 16 minutes, or until the tortillas are crispy and the cheese is melted.

Cool & Serve:
Let the tacos cool for about 3 minutes before serving.

Warm Tortillas: Be sure to warm the tortillas before folding them to avoid cracking. If they don’t stay folded, secure them with a toothpick.
