8 slices sourdough bread

8 oz sliced roasted turkey breast (deli or leftover)

8 slices cooked bacon

8 slices sharp cheddar cheese

2 tablespoons mayonnaise (optional)

2 tablespoons Dijon mustard (optional)

2 tablespoons unsalted butter (for toasting)
Instructions

Preheat a skillet or griddle over medium heat.

Spread butter on one side of each slice of sourdough bread. If using mayo or mustard, spread on the unbuttered side.

Layer the sandwich: place 1 slice of cheddar cheese, a few slices of turkey, 2 slices of bacon, and another slice of cheddar cheese between two slices of bread, buttered side out.

Place the sandwich in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted. Press lightly with a spatula for even browning.
