Description

This vibrant winter chopped salad is packed with healthy, crunchy veggies like kale, Brussels sprouts, and carrots, topped with sweet cranberries, pecans, and feta cheese. Tossed with a simple balsamic vinaigrette, it’s a refreshing and nutrient-rich salad perfect for the colder months.

Ingredients

Scale
  • 1 cup kale, chopped
  • 1 cup Brussels sprouts, shredded
  • 1/2 cup red cabbage, thinly sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup dried cranberries
  • 1/4 cup pecans, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the kale, Brussels sprouts, red cabbage, and carrots.
  2. Add the dried cranberries, pecans, and feta cheese to the bowl.
  3. Drizzle the olive oil and balsamic vinegar over the salad.
  4. Season with salt and pepper, then toss to combine.
  5. Serve and enjoy!

Notes

  • For extra crunch, you can add roasted seeds or nuts.
  • If you prefer a vegan version, simply omit the feta cheese or substitute it with a plant-based cheese.
  • This salad can be made ahead of time, just keep the dressing separate until ready to serve.
