- 1 cup of rice
- 1 cup of diced chicken
- 1 cup of mixed vegetables (carrots, peas, corn)
- 2 cups of chicken broth
- 1 tablespoon of olive oil

Instructions
- Heat olive oil in a large skillet or saucepan over medium heat.
- Add the diced chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables to the pan and sauté for another 2-3 minutes until they begin to soften.
- Stir in the rice, chicken broth, salt, and pepper. Bring the mixture to a boil.
