Ingredients

  • 1 cup of rice
  • 1 cup of diced chicken
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 2 cups of chicken broth
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet or saucepan over medium heat.
  • Add the diced chicken to the pan and cook until browned and cooked through, about 5-7 minutes.
  • Add the mixed vegetables to the pan and sauté for another 2-3 minutes until they begin to soften.
  • Stir in the rice, chicken broth, salt, and pepper. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and cover the pan. Let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
