Ingredients

Scale
  • 2 cans Chunk Chicken Breast
  • ½ cup Chopped Almonds
  • 2 stalks Celery, chopped
  • 1 Crisp Red or Green Apple, diced
  • 2 tsp Cajun Seasoning
  • 1 tbsp Dried Parsley
  • 4 tbsp Mayonnaise or Miracle Whip
  • 2 tbsp Sour Cream

Instructions

  • Open the cans of chunk chicken breast and drain well. Place the chicken into a large mixing bowl.
  • Dice the apple and chop the celery. Add both to the bowl with the chicken.
  • Chop the almonds and add them to the mixture for extra crunch and flavor.
  • Sprinkle in the Cajun seasoning, dried parsley, mayonnaise, and sour cream. Mix all ingredients thoroughly until well combined.
  • Taste and adjust the seasoning, adding more Cajun seasoning if desired.
  • Refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld together.
  • Serve chilled on its own, in a sandwich, or in wraps.

Notes

  • You can use Miracle Whip for a tangier, slightly sweeter flavor, or stick with mayonnaise for a creamier result.
  • Feel free to swap almonds with other nuts like walnuts or pecans if preferred.
  • For a lighter version, use Greek yogurt in place of sour cream.
