Ingredients
Scale
- For the salad:
- 1 lb ground beef (90% lean/10% fat)
- 1 yellow onion, sliced
- 2 tbsp water (for caramelizing onions)
- 1 cup beef broth (low-sodium)
- 1 1/2 cups shredded lettuce (romaine or iceberg)
- 1/2 cup dill pickles, chopped
- 1/4 cup pickled jalapeños (optional, for a hint of spice)
- For the sauce:
- 1/2 cup full-fat mayonnaise
- 2 tbsp pickle relish (drained well)
- 1 tbsp ketchup
- 1 tsp honey
- 1 tsp Worcestershire sauce
- Salt and pepper, to taste
Instructions
- Caramelize the onions: Heat a large skillet over medium heat and add the sliced onions. Cook the onions, stirring occasionally. If they begin to stick, add a little water (1 tbsp at a time) to help them soften and brown evenly. Continue cooking for 15-20 minutes until the onions are golden brown and caramelized. Add a pinch of salt and pepper to taste.
- Cook the ground beef: In the same skillet, push the onions to one side and add the ground beef to the pan. Break the beef apart with a spoon and cook until browned and fully cooked, about 6-8 minutes. Stir in the Worcestershire sauce and beef broth, allowing the mixture to simmer for 5 minutes, until the liquid has reduced slightly. Season with salt and pepper to taste.
- Make the dressing: In a small bowl, combine the mayonnaise, pickle relish, ketchup, honey, and Worcestershire sauce. Stir until smooth, then season with salt and pepper to taste. If the sauce is too thick, add a splash of water to reach your desired consistency.
- Assemble the salad: In a large serving bowl, add the shredded lettuce, chopped dill pickles, and pickled jalapeños (if using). Top with the cooked ground beef and caramelized onions.
- Serve: Drizzle the dressing over the salad and toss everything together until well combined. Serve immediately and enjoy!
Notes
- For a lower-fat version, you can substitute the full-fat mayo with Greek yogurt or a lighter mayo.
- If you prefer a spicier salad, add extra pickled jalapeños or a few dashes of hot sauce to the dressing.
- The beef mixture can be made ahead of time and stored in the fridge for up to 2 days.
