This stunning Rainbow Drip Cake features vibrant layers of colorful cake with a smooth, rich white chocolate drip. It’s a fun and magical treat perfect for birthdays, celebrations, or any special occasion, guaranteed to bring joy to your guests!

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • Gel food coloring in various colors
  • 1 cup white chocolate chips
  • 1/2 cup heavy cream
  • Sprinkles for decoration

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  • In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, beat the softened butter until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  • Add the vanilla extract and buttermilk, mixing until smooth.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Divide the batter evenly into several bowls. Add a few drops of gel food coloring to each bowl to create different colors.
  • Pour the colored batters into the cake pans, layering them to create a rainbow effect.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans before removing.
  • While the cakes cool, prepare the white chocolate drip. Heat the white chocolate chips and heavy cream in a microwave-safe bowl in 20-second intervals, stirring in between, until fully melted and smooth.
  • Once the cakes are cooled, stack them on a cake stand, frosting between each layer with your choice of frosting.
  • Pour the white chocolate ganache over the top of the cake, letting it drip down the sides.
  • Decorate with sprinkles on top and around the edges.
  • Allow the ganache to set before serving.

Notes

  • For a smoother finish, chill the cake layers for a few minutes before frosting to ensure the ganache sets nicely.
  • You can use any frosting of your choice, such as buttercream, for the layers and frosting between the cake.
