- 4 large russet potatoes, peeled and diced
- 4 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese (or your preferred cheese)
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper, to taste
- 1 packet (1 oz) brown gravy mix
- 1 1/4 cups water (for the gravy mix)
- 1 tablespoon chopped green onions (optional, for garnish)
Instructions
- Prepare the potatoes:
Peel and dice the russet potatoes. Add them to a large pot of salted water and bring to a boil. Cook the potatoes until they are tender, about 10-12 minutes. Drain the potatoes and return them to the pot. - Mash the potatoes:
Mash the cooked potatoes with a potato masher or hand mixer until smooth. Add the butter, sour cream, and milk, and continue mashing until the potatoes are creamy. Season with salt and pepper to taste. - Make the gravy:
In a small saucepan, combine the brown gravy mix with water. Bring it to a boil, stirring constantly, and simmer for 1-2 minutes, or until the gravy thickens. - Assemble the potatoes:
Spread the mashed potatoes evenly in a baking dish. Pour the brown gravy over the mashed potatoes, spreading it out to cover the surface. - Add cheese and bacon:
Sprinkle the shredded cheddar cheese and crumbled bacon over the top of the potatoes. - Bake the dish:
Preheat your oven to 375°F (190°C). Bake the potatoes in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly. - Serve:
Remove from the oven and garnish with chopped green onions if desired. Serve warm and enjoy!
Notes
- For an extra flavor boost, you can add some sautéed onions or garlic to the mashed potatoes.
