For the Salmon:

  • 4 salmon fillets (skin-on or skinless)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper, to taste

For the Sauce:

  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • Fresh basil or parsley for garnish

Instructions

For the Salmon:

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil and butter over medium-high heat.
  3. Add the salmon fillets, skin-side down (if using skin-on), and cook for 4-5 minutes until the skin is crispy and golden. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon reaches your desired level of doneness.
  4. Remove the salmon from the skillet and set aside.

For the Sauce:

  1. In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Stir in the chopped sun-dried tomatoes and cook for another minute.
  3. Pour in the heavy cream and chicken broth, scraping up any bits from the bottom of the skillet.
  4. Bring the sauce to a simmer and cook for 3-5 minutes until it thickens slightly.
  5. Stir in the grated parmesan cheese, lemon juice, and lemon zest. Continue to simmer for another 1-2 minutes, adjusting the seasoning with salt and pepper if needed.

To Assemble:

  1. Return the salmon fillets to the skillet, spooning some of the sauce over the top. Let it cook for another 1-2 minutes to warm through.
  2. Garnish with fresh basil or parsley and serve immediately with your choice of side dishes, such as rice, vegetables, or mashed potatoes.
