For the Salmon:
- 4 salmon fillets (skin-on or skinless)
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper, to taste
For the Sauce:
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup grated parmesan cheese
- 1 tbsp lemon juice
- Zest of 1 lemon
- Fresh basil or parsley for garnish
Instructions
For the Salmon:
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the salmon fillets, skin-side down (if using skin-on), and cook for 4-5 minutes until the skin is crispy and golden. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon reaches your desired level of doneness.
- Remove the salmon from the skillet and set aside.
For the Sauce:
- In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream and chicken broth, scraping up any bits from the bottom of the skillet.
- Bring the sauce to a simmer and cook for 3-5 minutes until it thickens slightly.
- Stir in the grated parmesan cheese, lemon juice, and lemon zest. Continue to simmer for another 1-2 minutes, adjusting the seasoning with salt and pepper if needed.
To Assemble:
- Return the salmon fillets to the skillet, spooning some of the sauce over the top. Let it cook for another 1-2 minutes to warm through.
- Garnish with fresh basil or parsley and serve immediately with your choice of side dishes, such as rice, vegetables, or mashed potatoes.
