Instructions
- Prepare the salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and a little lemon juice. Heat the olive oil in a large skillet over medium-high heat.
- Cook the salmon: Place the salmon fillets in the hot skillet, skin-side down if using skin-on. Cook for 4-5 minutes per side (or until the internal temperature reaches 145°F/63°C and the salmon flakes easily with a fork). Once cooked, remove the salmon from the skillet and set aside.
- Make the sauce: In the same skillet, reduce the heat to medium. Add the butter and let it melt. Add the minced garlic and red pepper flakes (if using) and sauté for 30 seconds, until fragrant.
- Add the liquids: Pour in the heavy cream and chicken broth, stirring to combine. Let the mixture simmer for 3-4 minutes to reduce slightly. Add the grated Parmesan cheese and Dijon mustard, and continue to stir until the cheese melts and the sauce thickens. Season with additional salt, pepper, and lemon juice to taste.
