Instructions
For the Chicken:
- In a shallow bowl, whisk together the cornstarch and all-purpose flour.
- In another bowl, beat the eggs.
- Dip each piece of chicken into the egg, then dredge in the flour and cornstarch mixture, coating well.
- Heat about 1 inch of vegetable oil in a large skillet or wok over medium-high heat.
- Fry the chicken pieces in batches, cooking for 4-5 minutes until golden and crispy. Remove from the skillet and drain on paper towels.
- Repeat with the remaining chicken pieces.
For the Honey Garlic Sauce:
- In a small saucepan, combine the honey, soy sauce, minced garlic, rice vinegar, and sesame oil.
- Bring to a simmer over medium heat and cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
- Taste and adjust seasoning if needed. For extra heat, add red pepper flakes to the sauce.
To Assemble:
- Once all the chicken is fried, add the crispy chicken pieces back to the skillet.
- Pour the honey garlic sauce over the chicken and toss to coat evenly.
