- 1 1/2 lbs ground beef
- 1 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 egg, beaten
- 8 oz canned diced tomatoes
- 1/2 cup quick-cooking oats
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together ground beef, salt, pepper, chopped onion, chopped green pepper, beaten egg, diced tomatoes, and quick-cooking oats until well combined.
- Shape the mixture into a loaf and place it in a 9″x13″ baking dish.
- In a small bowl, combine ketchup, brown sugar, and mustard to make the sauce. Mix well.
- Pour the sauce over the meatloaf, covering it evenly.
- Bake in the preheated oven for 1 hour or until fully cooked through.
- Let the meatloaf rest for a few minutes before slicing and serving.
Notes
- If you prefer a spicier meatloaf, consider adding a dash of hot sauce or a pinch of cayenne pepper to the sauce.
- For a more moist texture, you can add a bit of milk or beef broth to the meat mixture.
