- 2 boneless, skinless chicken breasts
- 1 cup fresh spinach
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and gently pound them to about 1/4-inch thickness.
- Season both sides of the chicken breasts with garlic powder, salt, and pepper.
- Layer the fresh spinach, mozzarella cheese, and grated Parmesan cheese on top of each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks.
- Heat olive oil in a skillet over medium-high heat.
- Brown the chicken rolls on all sides, about 3-4 minutes per side, then transfer the rolls to a baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
- Remove the toothpicks before serving.
