  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  • Preheat the oven to 375°F (190°C).
  • Place the chicken breasts between two sheets of plastic wrap and gently pound them to about 1/4-inch thickness.
  • Season both sides of the chicken breasts with garlic powder, salt, and pepper.
  • Layer the fresh spinach, mozzarella cheese, and grated Parmesan cheese on top of each chicken breast.
  • Roll up each chicken breast tightly and secure with toothpicks.
  • Heat olive oil in a skillet over medium-high heat.
  • Brown the chicken rolls on all sides, about 3-4 minutes per side, then transfer the rolls to a baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  • Remove the toothpicks before serving.
