- Submerge the pineapple rings in the rum mixture and let them soak for at least 30 minutes. You can soak them longer for a more intense rum flavor if desired.

- In a separate bowl, whisk together the flour and coconut flakes.
- In another bowl, beat the eggs and mix in the coconut milk until smooth.

Coat the Pineapple Rings:
- Remove the pineapple rings from the rum mixture and pat them dry with a paper towel.
- Dip each pineapple ring into the flour and coconut mixture, ensuring it’s evenly coated. Then dip it into the egg mixture, followed by another coating of the coconut-flour mixture.

- Heat vegetable oil in a deep skillet or frying pan over medium-high heat.
