Description

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz cream cheese, softened

 

  • ½ cup powdered sugar

Instructions

  • Soak the Pineapple Rings:

    • In a shallow bowl, combine the dark rum and coconut rum.
    • Submerge the pineapple rings in the rum mixture and let them soak for at least 30 minutes. You can soak them longer for a more intense rum flavor if desired.
  • Prepare the Coconut Coating:

    • In a separate bowl, whisk together the flour and coconut flakes.
    • In another bowl, beat the eggs and mix in the coconut milk until smooth.
  • Coat the Pineapple Rings:

    • Remove the pineapple rings from the rum mixture and pat them dry with a paper towel.
    • Dip each pineapple ring into the flour and coconut mixture, ensuring it’s evenly coated. Then dip it into the egg mixture, followed by another coating of the coconut-flour mixture.
  • Fry the Pineapple Rings:

    • Heat vegetable oil in a deep skillet or frying pan over medium-high heat.
    • Once the oil is hot, carefully add the coated pineapple rings to the pan and fry for about 2-3 minutes per side, or until golden brown and crispy.
    • Remove the fried pineapple rings from the oil and place them on a paper towel to drain excess oil.
  • Prepare the Cream Cheese Sauce:

    • In a bowl, mix the softened cream cheese with the powdered sugar until smooth and creamy.
    • If the mixture is too thick, you can add a small amount of coconut milk to reach your desired consistency.

 

  • Serve:

    • Serve the fried pineapple rings warm, drizzled with the cream cheese sauce for a rich, decadent finish.

Notes

  • You can adjust the amount of rum based on your personal taste preference, or use just one type of rum if you prefer.
  • For a different twist, you can sprinkle a little cinnamon or nutmeg on top of the coconut crust before frying.
