  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 1/2 cup crumbled feta cheese

  • 2 tbsp olive oil (for searing)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine (to secure the rolls)
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  • Prepare the Chicken:
    • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/2-inch thick. This helps the chicken cook evenly and makes it easier to roll up.
  • Make the Filling:
    • In a small bowl, combine the chopped spinach, sun-dried tomatoes, crumbled feta cheese, and mozzarella cheese (if using). Stir until everything is well combined.
  • Stuff the Chicken:
    • Season both sides of the chicken breasts with garlic powder, onion powder, dried oregano, salt, and pepper.
    • Spoon a portion of the feta, spinach, and sun-dried tomato mixture onto the center of each chicken breast. Be generous, but make sure the filling is spread evenly along the center.
    • Carefully roll up the chicken breasts around the filling, securing the ends with toothpicks or kitchen twine to hold the rolls together.
  • Sear the Chicken:
    • Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken rolls to the skillet and sear on each side for about 2-3 minutes, or until golden brown. This step will give the chicken a nice crispy exterior.
  • Bake the Chicken:
    • Once the chicken is seared, transfer the skillet to the preheated oven. Bake the chicken for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), and the juices run clear.
