This dish is easy to make and perfect for a satisfying dinner, served with your favorite sides.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 1/2 cup crumbled feta cheese
- 1/4 cup shredded mozzarella cheese (optional, for extra creaminess)
- 2 tbsp olive oil (for searing)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- Toothpicks or kitchen twine (to secure the rolls)
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/2-inch thick. This helps the chicken cook evenly and makes it easier to roll up.
- Make the Filling:
- In a small bowl, combine the chopped spinach, sun-dried tomatoes, crumbled feta cheese, and mozzarella cheese (if using). Stir until everything is well combined.
- Stuff the Chicken:
- Season both sides of the chicken breasts with garlic powder, onion powder, dried oregano, salt, and pepper.
- Spoon a portion of the feta, spinach, and sun-dried tomato mixture onto the center of each chicken breast. Be generous, but make sure the filling is spread evenly along the center.
- Carefully roll up the chicken breasts around the filling, securing the ends with toothpicks or kitchen twine to hold the rolls together.
- Sear the Chicken:
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken rolls to the skillet and sear on each side for about 2-3 minutes, or until golden brown. This step will give the chicken a nice crispy exterior.
- Bake the Chicken:
- Once the chicken is seared, transfer the skillet to the preheated oven. Bake the chicken for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), and the juices run clear.
- Serve:
- Remove the chicken from the oven and allow it to rest for a few minutes before removing the toothpicks or twine. Slice the chicken rolls and serve with your favorite side dishes.
- Garnish with fresh basil or parsley, if desired.
Notes
- If you prefer, you can use chicken thighs instead of breasts for a juicier option.
- You can make the filling ahead of time and store it in the fridge until you’re ready to prepare the chicken.
- Serve this dish with a side of roasted vegetables, mashed potatoes, or a fresh green salad.
