Description

Pecan Pie Squares offer the classic flavor of a traditional pecan pie in an easy-to-make, portable bar form. With a buttery shortbread crust, gooey pecan filling, and a touch of sweetness, these squares are perfect for gatherings, holidays, or a sweet treat anytime.

For the crust:

  • 2 cups (255g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 3/4 teaspoon kosher salt
  • 3/4 cup (170g) unsalted butter, cold and cut into pieces

For the filling:

  • 2 cups (200g) chopped pecans
  • 3/4 cup (150g) dark brown sugar
  • 2 tablespoons (15g) all-purpose flour
  • Pinch of kosher salt
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) light corn syrup

Instructions

  • Prepare the crust:
    • Preheat your oven to 350°F (175°C).
    • In a food processor, combine the flour, sugar, and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
    • Press the mixture evenly into the bottom of a greased 9×13-inch baking pan.
    • Bake for 15-20 minutes, or until the crust is lightly golden. Remove from the oven and set aside.
  • Prepare the filling:
    • In a large bowl, whisk together the brown sugar, flour, and salt.
    • Add the eggs and vanilla extract, whisking until smooth.
    • Stir in the corn syrup until well combined.
    • Fold in the chopped pecans.
  • Assemble and bake:
    • Pour the pecan filling over the baked crust, spreading it evenly.
    • Return to the oven and bake for 25-30 minutes, or until the filling is set and slightly puffed.
    • Allow to cool completely in the pan on a wire rack.
    • Once cooled, cut into squares and serve.

Notes

  • For a deeper flavor, consider using dark corn syrup instead of light corn syrup.
  • Make sure to cool the bars completely before cutting to ensure the filling sets properly.
