For the crust:
- 2 cups (255g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 3/4 teaspoon kosher salt
- 3/4 cup (170g) unsalted butter, cold and cut into pieces
For the filling:
- 2 cups (200g) chopped pecans
- 3/4 cup (150g) dark brown sugar
- 2 tablespoons (15g) all-purpose flour
- Pinch of kosher salt
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup (240ml) light corn syrup
Instructions
- Prepare the crust:
- Preheat your oven to 350°F (175°C).
- In a food processor, combine the flour, sugar, and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of a greased 9×13-inch baking pan.
- Bake for 15-20 minutes, or until the crust is lightly golden. Remove from the oven and set aside.
- Prepare the filling:
- In a large bowl, whisk together the brown sugar, flour, and salt.
- Add the eggs and vanilla extract, whisking until smooth.
- Stir in the corn syrup until well combined.
- Fold in the chopped pecans.
- Assemble and bake:
- Pour the pecan filling over the baked crust, spreading it evenly.
- Return to the oven and bake for 25-30 minutes, or until the filling is set and slightly puffed.
- Allow to cool completely in the pan on a wire rack.
- Once cooled, cut into squares and serve.
Notes
- For a deeper flavor, consider using dark corn syrup instead of light corn syrup.
- Make sure to cool the bars completely before cutting to ensure the filling sets properly.
- These bars can be stored in an airtight container at room temperature for up to a week.
