  • Salt and pepper, to taste
  • 1 cup buttermilk (or regular milk)
  • 1 large egg
  • 1 1/2 cups panko breadcrumbs (for extra crunch)

Instructions

  • Prepare the onions: Slice the onions into 1/4-inch thick rings. Separate the rings and set them aside.
  • Make the batter: In a large bowl, whisk together the flour, baking powder, paprika, garlic powder, onion powder, salt, and pepper. In another bowl, beat the egg and buttermilk together until smooth.
  • Coat the onion rings: Dip each onion ring first into the dry flour mixture, then into the buttermilk mixture, and back into the flour mixture, making sure each ring is well-coated.
  • Coat with breadcrumbs: After dipping in the flour mixture, coat the onion rings with panko breadcrumbs for an extra crispy texture.
  • Fry the onion rings: Heat vegetable oil in a large skillet or deep fryer to 375°F (190°C). Fry the onion rings in batches for 2-3 minutes or until golden brown and crispy. Remove from the oil and drain on a paper towel-lined plate.
  • Serve: Serve immediately with your favorite dipping sauce such as ranch, ketchup, or spicy mayo.
