Description

These Fudgy Brownie Cookies are the perfect combination of a chewy cookie and a rich, fudgy brownie. With a soft, melt-in-your-mouth texture and the deep flavor of chocolate, these cookies will satisfy your sweet tooth in the best way possible. Easy to make and utterly indulgent, they are a must-try for chocolate lovers!

Ingredients

Scale
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter, cubed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chunks or additional chocolate chips (optional)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mats.
  • Melt the chocolate and butter: In a microwave-safe bowl, melt the semi-sweet chocolate chips and cubed butter together in 30-second intervals, stirring after each, until smooth and fully melted. Let it cool slightly.
  • Mix the wet ingredients: In a large mixing bowl, whisk together the sugar, eggs, and vanilla extract until well combined and slightly fluffy.
  • Add the melted chocolate: Stir the cooled, melted chocolate mixture into the egg mixture, mixing until smooth and fully incorporated.
  • Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  • Add chocolate chunks: Gently fold in the chocolate chunks or extra chocolate chips, if using.
  • Scoop the dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. The dough will be thick and sticky.
  • Bake the cookies: Bake for 8-10 minutes, or until the cookies are slightly puffed and the edges are set. The centers should still look soft and fudgy.
  • Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • These cookies have a fudgy, brownie-like texture, so they may appear soft when you first take them out of the oven. Let them cool to set properly.
  • For extra richness, try using dark chocolate chips or adding a pinch of espresso powder to enhance the chocolate flavor.
  • Store cookies in an airtight container for up to 4 days at room temperature.
