Description

These Chicken Alfredo Lasagna Rolls are a comforting twist on traditional lasagna! Tender lasagna noodles filled with creamy ricotta, shredded chicken, and Alfredo sauce, then baked with melted mozzarella and Parmesan. A family favorite that’s easy to make and full of flavor!

Ingredients

Scale

(Serves 4-6):

  • 12 lasagna noodles, cooked and cooled
  • 2 cups cooked chicken, shredded
  • 1 jar (15 oz) Alfredo sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded (divided)
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Oven:

    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  • Prepare the Filling:

    • In a large mixing bowl, combine the shredded chicken, ricotta cheese, ½ cup of the shredded mozzarella cheese, grated Parmesan cheese, beaten egg, garlic powder, and Italian seasoning. Stir until everything is well combined.
  • Assemble the Lasagna Rolls:

    • Lay the cooked and cooled lasagna noodles flat on a clean surface.
    • Spread a few tablespoons of the chicken and cheese mixture along the length of each lasagna noodle.
    • Roll up each noodle tightly and place it seam-side down in the prepared baking dish.
  • Top with Alfredo Sauce:

    • Pour the Alfredo sauce over the lasagna rolls, making sure they are evenly coated.
  • Bake the Lasagna Rolls:

    • Sprinkle the remaining ½ cup of shredded mozzarella cheese on top of the rolls.
    • Cover the baking dish with aluminum foil and bake for 20 minutes.
    • After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve:

    • Remove from the oven and let the rolls sit for a few minutes before serving.
    • Garnish with freshly chopped parsley and serve warm.

Notes

  • You can use rotisserie chicken for a quicker option.
  • Add some spinach or other vegetables to the filling for extra flavor and nutrition.
  • Feel free to top the rolls with extra Parmesan cheese or even a sprinkle of crushed red pepper flakes for some heat.
