  • Optional: chili flakes, extra herbs (like basil or oregano)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small ovenproof dish or baking tray, add a drizzle of olive oil and sauté the garlic until fragrant (about 1 minute).
  • Add the spinach and cook until wilted.
  • Add the tomatoes, and sprinkle the crumbled feta over the mixture.
  • Create two small wells in the mixture and crack one egg into each well.
  • Season with salt, pepper, and optional chili flakes or herbs.
  • Bake for about 12-15 minutes, or until the eggs are set to your desired consistency.
  • Remove from the oven and serve immediately.
