Instructions
- Preheat your oven to 375°F (190°C).
- In a small ovenproof dish or baking tray, add a drizzle of olive oil and sauté the garlic until fragrant (about 1 minute).
- Add the spinach and cook until wilted.
- Add the tomatoes, and sprinkle the crumbled feta over the mixture.
- Create two small wells in the mixture and crack one egg into each well.
- Season with salt, pepper, and optional chili flakes or herbs.
- Bake for about 12-15 minutes, or until the eggs are set to your desired consistency.
- Remove from the oven and serve immediately.
