Description

Baked Cottage Cheese Eggs are a delightful and nutritious breakfast or brunch option. The combination of rich cottage cheese and perfectly baked eggs creates a creamy, savory dish that’s high in protein and full of flavor. It’s easy to make and perfect for a filling meal to start your day.

Ingredients

Scale
  • 4 large eggs
  • 1 cup cottage cheese (preferably full-fat or 2%)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix of both)
  • 1 tablespoon olive oil or butter (for greasing)
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1/4 teaspoon garlic powder (optional)
  • Fresh herbs for garnish (such as parsley, chives, or dill, optional)

  • 1/4 teaspoon paprika (optional for topping)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a small baking dish (like a 9×9-inch or individual ramekins) with olive oil or butter.
  • Prepare the Cottage Cheese: In a bowl, mix the cottage cheese, shredded cheese, salt, pepper, and garlic powder (if using). Stir until the ingredients are well combined.
  • Add the Eggs: Crack the eggs directly into the cottage cheese mixture, spacing them evenly in the dish. Try to keep the yolks intact.
  • Bake: Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly soft. You can bake longer if you prefer firmer yolks.

  • Garnish and Serve: Once done, remove from the oven and garnish with fresh herbs and a sprinkle of paprika if desired. Serve warm.

Notes

  • You can add sautéed vegetables like spinach, mushrooms, or bell peppers to the cottage cheese mixture for extra flavor.
  • For a more indulgent version, you can mix in a bit of heavy cream or sour cream with the cottage cheese.

  • If you want firmer eggs, you can increase the baking time by a few minutes.
