Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Mix the pineapple filling: In a large bowl, combine the drained pineapple, sugar, flour, melted butter, beaten egg, and vanilla extract. Stir well until fully combined.
- Add the cheese: Fold in the shredded cheddar cheese to the pineapple mixture, mixing gently.
- Prepare the topping: In a separate bowl, combine the crushed Ritz crackers with the melted butter. Stir until the crackers are well-coated with the butter.
- Assemble the casserole: Pour the pineapple mixture into the prepared baking dish. Evenly sprinkle the buttered cracker crumbs over the top.
