Description

A simple and delicious dish that combines the sweet tang of pineapple with a buttery, crispy topping. This comforting casserole is perfect as a side dish for dinner or as a dessert at family gatherings!

Ingredients

Scale
  • 2 (20 oz) cans of crushed pineapple, drained (or fresh pineapple, chopped)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups shredded cheddar cheese (sharp or mild, based on preference)
  • 1 cup crushed Ritz crackers (about 30 crackers)
  • 2 tablespoons butter, melted (for topping)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Mix the pineapple filling: In a large bowl, combine the drained pineapple, sugar, flour, melted butter, beaten egg, and vanilla extract. Stir well until fully combined.
  • Add the cheese: Fold in the shredded cheddar cheese to the pineapple mixture, mixing gently.
  • Prepare the topping: In a separate bowl, combine the crushed Ritz crackers with the melted butter. Stir until the crackers are well-coated with the butter.
  • Assemble the casserole: Pour the pineapple mixture into the prepared baking dish. Evenly sprinkle the buttered cracker crumbs over the top.
  • Bake: Bake in the preheated oven for 30-35 minutes or until the casserole is golden and bubbly around the edges.
  • Serve: Let the casserole cool for a few minutes before serving.

Notes

  • You can adjust the sweetness of the casserole by adding more or less sugar based on your taste.
  • If you want to make this dish a bit lighter, you can use reduced-fat cheese and butter.
  • For extra crunch, you can mix in some chopped pecans or walnuts into the topping.
