  • 1 cup ricotta cheese
  • 1/2 cup honey
  • 1/4 cup chopped pistachios
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 350°F (175°C). Grease a bundt pan.
  • In a large bowl, mix together ricotta cheese, honey, pistachios, eggs, vegetable oil, and vanilla extract until well combined.
  • Add in the flour, baking powder, and salt, mixing until fully incorporated.
  • Pour the batter into the prepared bundt pan and smooth the top.
  • Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bundt cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Once cooled, serve as is or drizzle with additional honey or powdered sugar if desired.

Notes

  • For extra pistachio flavor, you can add more chopped pistachios to the batter or use them to decorate the top of the cake.
  • You can also drizzle the cake with a honey glaze for an extra touch of sweetness.
