Description

This delicious and creamy chicken salad is made with tender rotisserie chicken, crunchy pecans, sweet cranberries, and a tangy dressing with a hint of honey and Dijon mustard. It’s perfect for a sandwich, served with crackers, or alongside fresh fruit and veggies for a lighter meal.

For the Salad:

  • 2 cups prepared rotisserie chicken (diced)
  • 1/2 cup pecans (coarsely chopped)
  • 1/3 cup dried cranberries
  • 2 stalks celery (thinly sliced)
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon honey
  • 1 1/2 teaspoons Dijon-style mustard
  • 1 1/2 teaspoons poppy seeds (optional)
  • 1 teaspoon lemon juice
  • Salt and pepper (to taste)

For Serving:

  • Croissants or other sandwich rolls (add some lettuce for a sandwich)
  • Thinly sliced apples
  • Celery sticks
  • Crackers

Instructions

  • Toast the Pecans (Optional):
    Place pecans in a dry pan over medium heat. Toast until fragrant, stirring occasionally. Set aside to cool, then finely chop.

  • Combine the Salad Ingredients:
    In a large bowl, combine the rotisserie chicken, pecans, cranberries, celery, mayonnaise, sour cream, honey, Dijon mustard, poppy seeds (if using), and lemon juice. Stir gently until everything is well coated. Taste and adjust the seasoning with salt and pepper as needed.

  • Serve:
    Dish up the chicken salad and serve with your choice of sides. It’s great on a croissant with lettuce or served with sliced apples, celery sticks, and crackers.
