  • 2 cups cooked, shredded chicken (rotisserie chicken works great)

  • 1 1/2 cups egg noodles (or any small pasta of your choice)

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • Salt and pepper, to taste

  • 2 tablespoons fresh parsley, chopped (for garnish)

  • 1 tablespoon lemon juice (optional, for brightness)


Instructions

  • Sauté the Vegetables:

    • In a large pot or Dutch oven, heat the olive oil over medium heat.

    • Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

  • Add Garlic and Broth:

    • Stir in the minced garlic and cook for another 1 minute until fragrant.

    • Pour in the chicken broth, scraping the bottom of the pot to release any brown bits (flavor!).

    • Add the shredded chicken, dried thyme, and dried rosemary. Stir to combine.

  • Simmer the Soup:

    • Bring the soup to a boil, then reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld together.

  • Cook the Noodles:

    • Add the egg noodles (or your chosen pasta) to the pot and simmer for an additional 8-10 minutes, or until the noodles are tender but not mushy.

 

  • Season and Serve:

    • Taste the soup and season with salt and pepper as needed.

    • Stir in the lemon juice for a little brightness (optional).

    • Ladle the soup into bowls, garnish with fresh parsley, and serve hot.

Notes

  • For an extra creamy version, you can add a splash of heavy cream or a dollop of sour cream.
