- 1 jar grape leaves
- 1 cup white rice
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped green onions
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- Rinse grape leaves under cold water and drain.
- In a medium bowl, mix together rice, parsley, mint, green onions, olive oil, lemon juice, salt, and pepper.
- Place a grape leaf flat on a work surface. Spoon about 1 tablespoon of the rice mixture onto the center of the leaf.
- Fold in the sides of the leaf and roll up tightly.
- Repeat with the remaining grape leaves and rice mixture.
- Serve chilled or at room temperature.
Notes
- Be sure to rinse the grape leaves well to remove any brine or saltiness.
- If you prefer, you can add a bit of garlic or onion powder to the rice mixture for extra flavor.
- Serve with a side of tzatziki sauce or a squeeze of fresh lemon juice.
