With a blend of sharp and mild cheddar cheeses, tangy pimentos, and a hint of Dijon mustard, this homemade pimiento cheese is flavorful and easy to make. It’s a delightful addition to any gathering, served with crackers, fresh vegetables, or as a topping for burgers.


Ingredients

  • 8 oz sharp cheddar cheese, grated
  • 8 oz mild cheddar cheese, grated
  • 1 jar (4 oz) pimentos, drained and chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  • Combine the Cheeses:
    In a large mixing bowl, combine the grated sharp cheddar cheese and mild cheddar cheese.
  • Add Pimentos and Seasonings:
    Stir in the chopped pimentos, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined and the mixture is smooth.
  • Optional: Add Green Onions:
    If using, stir in the finely chopped green onions for added flavor and color.
  • Chill and Serve:
    Cover the pimiento cheese and refrigerate for at least 1 hour to allow the flavors to meld together. Serve chilled or at room temperature with crackers, vegetables, or as a sandwich spread.

Notes
