Description

This One Pot Chicken Alfredo is a creamy, delicious, and easy-to-make dish. With tender diced chicken, rich Alfredo sauce, and perfectly cooked pasta, all made in one pot, it’s a simple yet satisfying meal that’s perfect for busy weeknights!

  • 4 tablespoons olive oil, divided
  • 1 ½ pounds chicken breast, diced
  • 4 cloves garlic, minced
  • 1 quart low-sodium chicken broth
  • 2 cups heavy cream
  • 1 pound penne pasta
  • 4 cups Parmesan cheese, freshly shredded with a microplane
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Chicken:

    • Heat 2 tablespoons of olive oil in a large pot or deep skillet over medium heat.
    • Add the diced chicken breast and season with salt and pepper. Cook for about 6-7 minutes, or until the chicken is browned and cooked through.
    • Remove the chicken from the pot and set it aside.
  • Sauté the Garlic:

    • In the same pot, add the remaining 2 tablespoons of olive oil.
    • Add the minced garlic and sauté for 1-2 minutes, until fragrant, being careful not to burn the garlic.
  • Cook the Pasta:

    • Add the chicken broth and heavy cream to the pot. Stir well to combine and bring the mixture to a simmer.
    • Add the penne pasta to the pot, making sure the pasta is submerged in the liquid. Cook according to the package instructions, usually about 10-12 minutes, stirring occasionally to prevent sticking.
  • Combine with Cheese:

    • Once the pasta is cooked and most of the liquid has been absorbed, reduce the heat to low.
    • Stir in the freshly shredded Parmesan cheese and return the cooked chicken to the pot. Stir until the cheese is melted and the sauce becomes creamy and smooth. Season with salt and pepper to taste.
  • Serve:

    • Garnish with freshly chopped parsley before serving.
    • Serve hot and enjoy!

Notes

  • You can use other pasta shapes if you don’t have penne, but penne works well for this recipe.
  • For extra flavor, you can add a pinch of red pepper flakes or some freshly ground black pepper.
