Ingredients
Scale
- 1 lb ground beef
- 1 small onion, diced
- 2 cups beef broth
- 1 cup milk
- 8 oz pasta (e.g., rotini or penne)
- 1 packet ranch seasoning mix (1 oz)
- 2 cups shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
-
Cook the Beef:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 5-7 minutes.
- Season with salt and pepper to taste.
-
Add Liquids and Pasta:
- Pour in the beef broth and milk, stirring to combine.
- Stir in the ranch seasoning mix.
- Add the pasta to the pot and bring the mixture to a simmer. Cook the pasta according to the package directions, about 10-12 minutes, until the pasta is tender and the liquid has mostly been absorbed.
-
Add Cheese:
- Once the pasta is cooked, reduce the heat to low.
- Stir in the shredded cheddar cheese until it’s melted and the sauce is creamy.
-
Serve:
- Taste and adjust seasoning with additional salt and pepper, if needed.
- Serve the creamy beef and cheddar ranch pasta hot!
Notes
- You can use any type of pasta you prefer, but short pasta shapes like rotini or penne work best to hold the sauce.
- For a spicier version, add a pinch of cayenne pepper or red pepper flakes to the beef mixture.
- If you prefer a thicker sauce, cook the pasta a little longer or reduce the liquid further.
- You can substitute ground turkey or chicken for the beef for a lighter version.
