Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cups beef broth
  • 1 cup milk
  • 8 oz pasta (e.g., rotini or penne)
  • 1 packet ranch seasoning mix (1 oz)
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil

 

  • Salt and pepper, to taste

Instructions

  • Cook the Beef:

    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 5-7 minutes.
    • Season with salt and pepper to taste.
  • Add Liquids and Pasta:

    • Pour in the beef broth and milk, stirring to combine.
    • Stir in the ranch seasoning mix.
    • Add the pasta to the pot and bring the mixture to a simmer. Cook the pasta according to the package directions, about 10-12 minutes, until the pasta is tender and the liquid has mostly been absorbed.
  • Add Cheese:

    • Once the pasta is cooked, reduce the heat to low.
    • Stir in the shredded cheddar cheese until it’s melted and the sauce is creamy.

  • Serve:

    • Taste and adjust seasoning with additional salt and pepper, if needed.
    • Serve the creamy beef and cheddar ranch pasta hot!

Notes

  • You can use any type of pasta you prefer, but short pasta shapes like rotini or penne work best to hold the sauce.
  • For a spicier version, add a pinch of cayenne pepper or red pepper flakes to the beef mixture.
  • If you prefer a thicker sauce, cook the pasta a little longer or reduce the liquid further.
