Description

This creamy and indulgent One-Pan Parmesan Chicken & Rice is the perfect dinner for any night of the week. Tender chicken breasts are cooked with creamy rice, rich Parmesan, and aromatic garlic, all in one pan—making cleanup a breeze!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

 

  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-7 minutes per side, or until browned and cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes, until softened and fragrant.
  • Add the rice to the skillet and stir to coat in the oil, onion, and garlic.
  • Pour in the chicken broth and heavy cream. Bring to a simmer, then reduce the heat to low and cover the skillet. Cook for 15-18 minutes, or until the rice is tender and the liquid is mostly absorbed.
  • Stir in the grated Parmesan cheese, then return the chicken to the skillet on top of the rice. Cover and let everything cook for another 5 minutes, until the chicken is heated through.

 

  • Garnish with fresh parsley before serving.

Notes

  • You can use chicken thighs instead of breasts for extra flavor and juiciness.
  • For added veggies, consider adding spinach or peas toward the end of cooking.

 

  • If the sauce is too thick, you can add a little more chicken broth or cream to reach your desired consistency.
