For the Cheese Mixture:
- 8 oz feta cheese, crumbled (block style)
- 1/2 block (4 oz) cream cheese, softened
- 1/2 cup sour cream
- 1 garlic clove, minced
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon olive oil
- Salt, to taste
To Garnish:
- More basil leaves, chopped
- Red pepper flakes, for spice
- Freshly grated Parmesan cheese

Prepare the Bruschetta:
- Core and dice the Roma tomatoes into small cubes.
- In a medium bowl, combine the diced tomatoes, basil, minced garlic, olive oil, balsamic vinegar, and salt. Toss to coat evenly.

- In the bowl of a food processor, add the feta cheese, cream cheese, sour cream, minced garlic, lemon juice, olive oil, and a pinch of salt.
