Description

This creamy, savory chicken dish is rich with a smooth cream cheese sauce and a hint of Italian seasoning. The chicken is tender and flavorful, making it the perfect meal for a quick dinner. The combination of garlic, onions, and a touch of red pepper flakes adds depth to the dish.


Ingredients

  • 8 ounces cream cheese (softened)
  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh chopped parsley (optional, for garnish)

Instructions

  1. Microwave the cream cheese until very soft. Cut it into smaller pieces and set it aside until needed.
  2. Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season with garlic powder, salt, and pepper.
  3. In a skillet, melt the butter and olive oil over medium-high heat. When the pan is hot, add the chicken and cook for about 5-6 minutes per side, or until golden and cooked through (165°F). Transfer the chicken to a plate.
  4. Reduce the heat to medium and add the onions to the skillet. Sauté for 5-7 minutes, or until softened and lightly browned.
  5. Stir in the minced garlic and cook for 30 seconds.
  6. Add the chicken broth, cream cheese, Italian seasoning, and crushed red pepper flakes to the skillet. Stir until the sauce is smooth (this may take a few minutes).
  7. Return the chicken to the skillet and warm through. If the sauce needs thinning, add a splash more chicken broth.
  8. Season with additional salt and pepper if needed. Sprinkle with fresh parsley before serving.

 

Notes

  • You can add more red pepper flakes for a spicier kick.
  • This dish pairs well with pasta, rice, or roasted vegetables.
